Chicken inasal at Manokan Country
Bacolod's own dish: chicken marinated in calamansi and annatto, then grilled over coals. Manokan Country is a row of open-air grill houses near the bay where the city has been eating it for decades. Eat it with your hands — everyone does.

The Ruins, Talisay
The shell of an Italianate mansion built in the early 1900s and burned during the Second World War, standing alone in the cane fields just outside Talisay. It is a short drive from the resort and best seen in the last hour before sunset, when the light comes straight through the empty windows.

Piaya, napoleones and a serious sweet tooth
Negros grew rich on sugar and the local baking never got over it. Piaya — flat bread filled with muscovado — and napoleones, a custard-filled millefeuille, are what visitors end up carrying home by the boxful.

MassKara and the sugar country
If you are here in October the city fills with masked dancers for MassKara, held every year since 1980. Out of season the masks are still on show around town, and the Negros Museum covers the sugar history that paid for all of it.
